From the Native Americans to the Celts and ancient Egyptians, feathers have signified celestial wisdom.  In In Christian symbolism feathers represented virtues. In fact, an image of three feathers were made into signet rings – each feather symbolizing Charity, hope, and faith. These rings were worn as a symbol of a virtuous soul – they were also used as wax seals.

These feather charm earrings are embellished with a 6MM Swarovski crystal, enhanced with a see bead on either end and then wire wrapped at the top, a sign of quality hand made jewelry.

Crystal Angel Ornaments


I created these to memorialize someone special who might’ve passed.  It’s a tiny Swarovski crystal angel created with a bicone, pearl and wing bead, suspended in a wooden ring, suspended on monofilament line.  After the holidays, move her from your tree to a window (suction foot included!) or even hang her from your rearview mirror!  These are available in all month colors.  See chart for details.  $10

Baby’s Heart, Mother’s Tears Earrings


1 in 4 pregnancies end in a loss.  Some happen before the woman even knows she’s pregnant.  Others happen well beyond the point of viability (which means if the story had a different ending, the baby wouldn’t have died in utereo.

All these items are made in memory of my 2 children, my only children who took their first breaths in Heaven.

Feta Cheese and Pepper Appetizer


5 oz feta or goat cheese
2/3 c jarred red peppers
1 tsp dried/1Tb fresh oregano
1 garlic clove (1 tsp)
2 tb milk or yogurt, more if needed

Toss in food processor and obliterate. This makes a yummy spread on a cracked wheat (those round thingies) sammich with maters and cucumbers.

Dark Fruit Pudding (Rote Gruetze)


This is my all time favorite pudding/porridge. In Germany it’s served with vanilla pudding poured over the top.  It’s wonderful with cottage cheese or over angel food cake.

ROTE GRUETZE (Literally Red Groats)
1.25# red fruit of your choosing. I like blueberries (superfood!) and strawberries or the 3 berry blend from Sams/Aldi
1 c vodka/rum/sweet vermouth (vermouth is cheapest)
1/2 or so cup of sugar or splenda depending on tartness of berries.
1/4 c or so cornstarch
Some water to keep them from burning to bottom of pan.

You can use fresh or frozen. Boil until somewhat mushy, then finish them off with a potato masher.  Add sugar and booze.  If you haven’t added much liquid, mix the cornstarch into about 1/2 c of water (temper it), then into pudding. If pudding is already liquidy, siphon out about 1/2 c and let it cool (add ice cubes if you need) and temper the cornstarch into that.

Once it’s thickened, add the booze.  If you need to take the edge off, don’t cook too long, LOL.  This works great over whole wheat waffles for breakfast (just remember to cook the booze off, hic)

‘Bama White BBQ sauce


This came from a friend of mine.  Sounds delish!  I’d use LF mayo and apple cider vinegar!!!

Alabama White Barbecue Sauce

• 1 cup mayonnaise
• 1 TBS lemon juice
• 1/4 cup vinegar
• 1 TBS pepper (fresh ground is fabulous)
• 1 TBS sugar

Directions:

Simply mix the sauce ingredients together and chill. Very simple!

Tips:

Don’t use white barbecue sauce as a marinade. It’s too rich and thick. If you slather this on before the meat goes on the grill, the sauce will burn. Cook the chicken about ¾ done on the grill and then begin basting with the white barbecue sauce.

White barbecue sauce is also excellent as a dip with the cooked chicken. Do not use the same white barbecue batch that you used for basting. That can be contaminated. If you want baste and dip, make a double batch and reserve half in a separate container for dipping

Salsa Cruda or Pico De Gallo Recipe


Salsa Cruda or Pico De Gallo

I have a food scale so I weigh everything.  Roma tomatoes are usually cheaper so that’s why I do that.  I make this by the GALLON. It freezes well enough to be used as a marinade (the texture is kinda wonky but it tastes great!!!)  I use the pan juices from this when cooked with chicken to pour over rice mixed with a bag of steamed mixed veggies and rice.  Delicioso!!

20 oz maters
1/2 bunch cilantro, stemmed
juice of 2 limes (1/4 c I think, lemon will work)
1 small onion or 1/2 a big one, I like red onions
1/8 c (small handful as in what you can inch between thumb and fingers when stuck in the jar) pickled jalapenos
1 tsp or more jarred garlic
1 tsp salt

Toss everything except the onions in a blender and pulse.  Quarter onions and pulse just a couple times. If you do it too long, it will release too much oniony goodness and it’ll be like drinking onion JUICE.  BLECH

Low fat cilantro pesto recipe


Low fat pesto –

2 cups loosely packed cilantro leaves (stems removed) I use one bunch
2 tablespoons slivered almonds (I’ve used sunflower seeds)
2 tablespoons Parmesan cheese (not the nasty canned stuff, I buy a little block and grate it)
2 tablespoons olive oil
2 tablespoons lemon juice
2 cloves garlic
2-4 teaspoons water (depending on desired consistency)
1/4 teaspoon sea salt

Guiltless Guacamole!


1 avocado
2/3 c cottage cheese (your choice of full/low/nonfat)
1 tsp each garlic and jarred jalapeno, more to taste (I use about 1 Tb jalapenos.  It’s up to you!)
1 green onion, chopped (optional)

Toss in blender and then enjoy!
